How to cook pork chops so it stays tender
- 1Pat the pork chops dry and salt it 15-40 minutes ahead. Dry surface means browning instead of steaming.
- 2Preheat the pan until a drop of water skitters, then add a thin film of oil. Crowding the pan is the number one reason pork chops turns grey.
